Nusa Dua, Bali, August 10, 2011—This September sees a spicy menu promotion at Nusa Dua Beach Resort and Spa’s Raja’s, Bali’s only authentic fine-dining restaurant. The resort recently welcomed Australian chef Geoffrey Sinclaire Clark to the property as executive chef, and spearheading Geoff’s enthusiastic approach to regional cuisine is September’s food promo, ‘The Spice Journey.’

“Southeast Asian cuisine is highly unique and diverse due to the dual influences of trade and colonisation over the past few hundred years,” said Geoff. “So because of the geographically strategic location of the area, all these dishes are peppered with the culinary styles of the Arabs, Chinese, English, Indian, Portuguese and Dutch—to name a few.”

 

Comprising a five-course family-style meal that runs the gamut from southern Thai Sino Style Crab Curry poached in aromatic coconut gravy, local herbs and with vermicelli through to Balinese Udang Pantung to Peranakan food from Singapore, and a selection of Indonesian desserts, the meal promises an epic epicurean adventure across Asia.

“The approach taken at Raja’s is particularly interesting to me,” he said. “What better place to be than a hotel with a truly local restaurant that is totally authentic in its approach, yet at the same time offers top-quality service in a five-star ambience.”

 

Geoff went on to also note that every Thursday night at Raja’s during September, he will hold a Chef’s Table evening, in which he will discuss his menu approach and culinary techniques for authentic cuisine traditions and cooking. Limited seats are available, though, so early booking is advised.
